- Vinification: each family obviously has its own secret recipe about the dosage quality of individual components in addition to the Barolo wine. Among the spices, herbs and roots that we most use in our Barolo Chinato the one that is certainly most relevant, and gives it its name, is obviously cinchona. But that's not all: rhubarb, coriander, clove, orange, cinnamon, vanilla, star anise and others that remain a cellar secret. Two infusions are made from these, which are then added to Barolo wine. Finally, the flavored wine still remains in the cellar in small oak barrels of 300-liter capacity for several months; then it will be bottled.

In the Mascarello household for more than seventy years, the production of this elixir has never ceased, using the ancient, unique recipe handed down from generation to generation.
Mascarello Barolo Chinato has a dark garnet red color and the nose tells of the myriad scents of the spices that make up its infusion. The palate is warm and round with a long sweet finish.
