- Appellation: Appellation of Controlled Origin
- Varietal: 100% Nebbiolo
- Gastronomic Pairings: red meats, game birds, long-aged cheeses.
- Vinification: de-stemmed and crushed grapes are sent to stainless steel fermenters where, inside, alcoholic fermentation takes place. The duration of this fermentation is about 20-25 days. During this time, the temperature is kept under strict control and never exceeds 25-28° C. Thanks to the prolonged contact of the must-wine with the pomace, the tannins and polyphenols essential for long aging in wood are extracted. After racking, the wine is racked first into steel tanks and then into wooden barrels with a capacity of about 30 hl. This engages, at a temperature of at least 20°C, the process of malolactic fermentation, which will make the wine softer and less aggressive.
- Aging: in tonneaux, small wooden barrels, (5 hl capacity) for a period ranging from 15 to 24 months. Bottle aging for 6 months before marketing.
- Serving Temperature: 18-20°C
- Alcohol content: 14%.
